Baking with Betty
This weeks column is dedicated to all the Irish folk out there. May you find your pot of gold!
4 boneless pork chops (cut pocket in each)
1 small bag frozen vegetables, thawed
1/4 pound American cheese, chopped
3 tablespoons steak sauce
4 strips bacon
Mix thawed vegetables with chopped cheese; add steak sauce. Stuff pork chops with mix. Wrap in bacon and bake at 350 degrees for 1 hour, or until done.
Italian Love Cake
1 box chocolate cake mix (not pudding type)
2 pounds ricotta cheese
1 teaspoon vanilla
3/4 cup sugar
Mix cake mix according to package directions. Pour into greased and floured 9-by-13-inch pan.
Mix together ricotta cheese, sugar, vanilla and eggs. Pour evenly on top of unbaked cake mix. Bake at 350 degrees for about 1 hour.
1 box instant chocolate pudding
1 cup milk
8 ounce container whipped topping
Mix pudding with milk. Fold in whipped topping. Spread on cooled cake and refrigerate.
Strawberry Lovers' Pie
3 squares semi-sweet chocolate, divided
1 tablespoon butter
9-inch pastry shell, baked
6 ounces softened cream cheese
1/2 cup sour cream
3 tablespoons sugar
1/2 teaspoon vanilla
3 to 4 cups hulled fresh strawberries
1/3 cup strawberry jam, melted
In a saucepan, melt 2 ounces chocolate and butter over low heat, stirring constantly; Spread or brush over bottom and up sides of pastry shell. Chill.
Meanwhile, in a mixing bowl, beat cream cheese, sour cream, sugar, and vanilla until smooth. Spread over chilled chocolate layer; cover and chill for 2 hours. Arrange strawberries, tip end up, atop the filling. Brush melted jam over strawberries. Melt the remaining chocolate and drizzle over the top.
