Liver with Apples

Mix together well:

3 chopped unpeeled, cooking apples

1 chopped large onion

3/4 teaspoon salt

freshly ground black peppercorns

 

Place in oiled baking dish:

1 pound sliced baby beef, pork, or veal liver

 

Cover liver slices with apple-onion mixture; top with:

4 slices bacon cut in half and a generous sprinkling of paprika; add 1/4 cup hot water. Cook at 350 degrees for 20 minutes.

 

Ham Slice with Apricots

2 pound slice ready-to-eat ham

8 or 10 whole cloves

1 teaspoon brown sugar

1 cup canned, whole, peeled apricots

2 tablespoons butter

Score the fat around the edges of the ham. Here and there in the fat and near the center bone, insert whole cloves. Sprinkle top with brown sugar; over this, arrange whole peeled apricots, letting some of the juice dribble around the slice of ham. Dot with butter. Bake, uncovered, in a moderate 375 degree oven until bubbly and brown, about 30 minutes.

 

Sour Cream Blackberry Pie

uncooked 10-inch pie crust

1 quart blackberries

1 cup sour cream

1/2 cup brown sugar

1 tablespoon flour

1 teaspoon lemon juice

Line a 10-inch ovenproof glass pie plate with pastry. Wash the blackberries and drain them thoroughly. With a fork, mix sour cream, brown sugar, and flour. Place blackberries and 1 teaspoon lemon juice, or less if the blackberries are tart (or none at all), in pie crust. Cover berries with sour cream mixture.

Bake in a hot 425 degree oven for 10 minutes. Reduce heat to 325 degrees and continue baking for 30 to 40 minutes or until the berries are soft and juicy and bubbling.

 

Chinese Chicken Wings

3 pounds chicken wings

1/2 cup soy sauce

1 cup honey

2 tablespoons vegetable oil

2 tablespoons ketchup

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Place chicken wings in a large baking dish, lined with foil. Mix remaining ingredients and pour over chicken. Bake at 350 degrees for 1 1/2 hours, stirring occasionally.
