Apple-Crab Meat Salad

1 can (6 1/2 ounces) crab meat

3/4 cup unpeeled, diced red apples

1/4 cup slivered, toasted almonds

3 tablespoons mayonnaise

3 tablespoons sour cream

salad greens

Flake crab meat. Combine with apples and almonds. Combine mayonnaise and sour cream and add to crab mixture. Toss to mix. Serve on salad greens. (Shrimp or lobster may be substituted for the crab meat).

 

Meatballs and Apple Sauerkraut

1 1/2 pounds ground meat (pork, veal, beef or turkey)

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon poultry seasoning

1 cup dry bread crumbs

1/3 cup milk

3 tart apples

1 quart sauerkraut

3 tablespoons sugar

1 tablespoon vinegar

1 tablespoon caraway seed (optional)

cooking oil

Gently combine meat, salt, pepper, poultry seasoning, bread crumbs and milk. Shape into meatballs. Heat cooking oil in a heavy skillet and cook meatballs until done. Keep hot.

Peel, core and slice apples. In a saucepan, combine apples with sauerkraut, sugar, vinegar and caraway seed. Bring to a boil and simmer 15 minutes. Put into a serving dish and top with meatballs.

 

Apple Oat Bran Muffins with Raisins

1 cup oat bran

1 cup flour

2 teaspoons baking powder

1/4 teaspoon cinnamon

1/2 teaspoon salt (if desired)

1/2 teaspoon baking soda

1 egg (or 2 whites)

1/2 cup brown sugar

1 cup milk

2 tablespoons vegetable oil

1 cup peeled, diced apple

1/2 cup raisins

Combine oat bran, flour, baking powder, cinnamon, salt and soda. Beat egg slightly with brown sugar. Add milk and vegetable oil to egg mixture and blend with dry ingredients. Fold in apples and raisins.

Spoon into greased muffin pan for 12 medium muffins. Bake at 400 degrees for about 20 minutes or until tester comes out clean. Leave in muffin pan for a few minutes to ease removal. Serve warm.

 

Applesauce-Orange Bars

1/2 cup butter (or margarine)

1 cup brown sugar firmly packed

1 egg beaten

3/4 cup applesauce

1 teaspoon grated orange peel

1 tablespoon orange juice

1 1/2 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chopped nuts

Melt butter in saucepan. Add sugar. Stir in egg, applesauce, orange peel and orange juice. Combine flour, baking powder, salt and soda. Stir in the applesauce mixture and nuts.

Spread in a greased 9-by-13-inch pan. Bake in 350 degree oven 25 minutes. While warm, spread with glaze.

Glaze:

1 cup powdered sugar

2 tablespoons orange juice

Combine powdered sugar and orange juice and stir until smooth.
