Stop by Maine Street Meats this Saturday, July 12. We will be "cracking" a whole 81 lb wheel of very special Parmigiano Reggiano around 11am. This famous cheese is named after the producing areas, which comprise the Provinces of Parma, Reggio Emilia, Bologna, Modena, and Mantova Italy.
Parmigiano-Reggiano is made from raw cow's milk. The whole milk of the morning milking is mixed with the naturally skimmed milk of the previous evening's milking, resulting in a part skim mixture. True Parmigiano-Reggiano cheese has a sharp, complex fruity/nutty taste with a strong savory flavor and a slightly gritty texture.
