I hope you all had a happy and safe christmas spent with family.Christmas snuck right up on us this year so we got to enjoy shopping with all the last minute shoppers out there. It shocks me how many rude and grouchy people in the stores this time of year!Still I like going and seeing the houses lit up on the way and the Christmas music playing in the stores.
On a different note I did see the coolest thing and I am going to do it this year! You take a empty jar and fill it with little notes each time a good thing happens.Then on New Years you empty it and read all the awesome things that happened threw out the year.
Kelsey and I went to Bell the Cat the other day I still cannot get over how yummy their food is! I find myself Craving their sandwiches All the Time! If you have not been there you must stop in!
Bum league Basketball is in Full Swing! So cute to see them all playing! Troys team is doing very well!!

If you have not tried this before it is a very yummy recipe!
Baked Chicken Chimichangas or Taco Pockets ~
Ingredients are variable and up to your taste as in how much cheese or chicken etc...
1 package 8oz cream cheese
1 package shredded pepper jack cheese
1 1/2 tablespoon(s) taco seasoning
8 flour tortillas
1 package(s) shredded cheddar cheese
** for the taco way I use 1lb ground beef or turkey and 1 packet taco seasoning and cook then add to recipe
Stir together cream cheese, Pepperjack cheese and taco seasoning.
Fold in chicken.
Divide among flour tortillas.
Tuck in sides, and roll up each tortilla.
Lay seam side down in a sprayed 9x13" baking dish.
Spray tops of tortillas with cooking spray.
Bake at 350 for 15 minutes.
Turn chimi's over, and bake an additional 15 minutes.
Serve with cheddar cheese, green onions, sour cream, and salsa.
