On Tuesday, June 7, at 6:30 p.m. in the Abbott Room of the Belfast Free Library there will be a free presentation titled, “Preserving the Harvest Using Lacto-Fermentation and Dehydration Techniques” with Ana and Roy Antaki.

Ana and Roy Antaki live at Weeping Duck Farm in Montville, where they grow all their produce in the garden and orchard. Over the years they have tried and perfected numerous methods of preservation, including the ancient, traditional technique of lacto-fermentation (such as sauerkraut and kimchi, as just two examples), which not only preserves their harvest, but also protects and even increases the nutritional value of their food.

The process creates probiotic agents that promote overall health. This is an ancient technique that has been “rediscovered.” In recent years, they have added dehydration to their options as well. The Antakis, who used to be vendors at the Farmers Market, are food self-sufficient to the point of never having to buy produce.
