This week’s column is dedicated to Mother Nature who is painting such beautiful colors on our foliage.

Creamy Mashed Potatoes

12 large potatoes, peeled and cooked

1 (8 ounce) package cream cheese

1 cup sour cream

2 teaspoons salt

1/2 teaspoon garlic salt

1/2 cup butter or oleo

Preheat oven to 350 degrees. Mash potatoes. Add cream cheese, sour cream, salt, garlic salt and butter; blend well. Spoon into baking dish and bake for 1 hour.

Green Tomato Relish

18 green tomatoes, quartered

8 red peppers, quartered

4 green peppers, quartered

6 onions, quartered

3 cups vinegar

3 cups sugar

1 tablespoon celery seed

1 cup water

1 1/2 tablespoons salt

4 tablespoons prepared mustard

Grind tomatoes, peppers, and onions; drain well. Add vinegar, sugar, celery seed, water, and salt to ground mixture. Pour into saucepan and cook for 15 minutes. Combine mustard with a little water or milk and add to cooked mixture. Cook 2 minutes longer. Pour into jars and seal.

Lazy Wife’s Dinner

1 cup diced raw potatoes

1 cup diced carrots

1 cup cooked meat (your choice)

1 cup uncooked macaroni

3 tablespoons chopped onion

1 can cream of chicken, mushroom, or celery soup

1 1/2 cups frozen vegetables

1 1/2 cups milk

1 cup shredded cheese

Preheat oven to 350 degrees. Combine all ingredients and pour into baking dish. Bake, covered, for 1 1/2 hours.

No-Crust Apple Pie

1 egg

1/2 cup flour

1 teaspoon baking powder

Dash of salt

2 medium apples sliced

1/2 cup brown sugar

1 teaspoon vanilla

1/2 cup chopped nuts (optional)

Preheat oven to 350 degrees. In mixing bowl beat egg and add remaining ingredients; mix well. Spread into greased pie pan and bake for 30 minutes or until apples are soft.

Cheri’s Sausage Breakfast Pockets

Unroll an 8 ounce tube of crescent dough and separate into 4 rectangles. Combine 1/4 pound cooked pork sausage, 1/2 cup shredded cheese, 2 ounces cream cheese and 1 tablespoon dried parsley flakes. Divide among rectangles. Bring 4 corners of dough to the center; twist and press to seal. Place on greased baking sheets. Bake at 375 degrees for 14 to 16 minutes or until golden brown.
