Low Fat Wild Blueberry Mandarin Orange Muffins

3 cups orange segments halved

1 tablespoon orange vanilla extract

4 1/2 cups cake flour

2 1/3 tablespoons baking powder

1 tablespoon baking soda

1 1/2 cups brown sugar

3 cups plain yogurt

3/4 cup sugar

3/4 cup egg substitute

1/2 cup canola oil

1 cup chopped pecans

4 cups blueberries

1/4 teaspoon salt

In a bowl combine segments and extract; reserve. In a large bowl combine flour, baking powder, baking soda and salt; In another bowl combine sugar, egg substitute, yogurt and oil. Stir into dry mixture and mix just to combine. Fold in orange mixture and pecans, if desired and wild blueberries. Scoop 1/4 cup of batter into each greased muffin tin. Bake at 400 degrees or until firm to touch. Makes 36 muffins.

Baked Lamb Chops

6 large potatoes

1 small onion

salt and pepper

cold water

6 lamb chops

Slice potatoes and lay in a flat, open baking dish. Put the onion, salt and pepper on top. Cover with cold water, and put lamb chops on top of that, with a little more salt. Bake at 350 degrees for about 1 1/4 hours.

Crunchy Swiss and Ham Appetizers

2 cups very stiff mashed potatoes

2 cups cooked ham, finely chopped

1 cup shredded Swiss cheese

1/3 cup mayo

1/4 cup minced onion

1 egg, well beaten

1 teaspoon prepared mustard

1/2 teaspoon salt

1/4 teaspoon pepper

3 1/2 cups crushed cornflakes

Preheat oven to 350 degrees. Combine all ingredients except cornflakes; chill. Shape into 1 inch balls and roll in cornflakes. Place on greased cookie sheet and bake for 25 to 30 minutes. Serve hot. Makes about 8 dozen.

Funny Cake Pie

Cake batter:

1 1/4 cups flour

3/4 cup sugar

2 teaspoons baking powder

1/4 cup shortening

1 egg

1/2 cup milk

1/2 teaspoon vanilla

Preheat oven to 350 degrees. Combine cake batter ingredients and set aside.


1 cup sugar

1/4 cup cocoa

3/4 cup hot water

1 teaspoon vanilla

1 (9 inch) unbaked pie shell

Combine sugar, cocoa, water and vanilla and pour into unbaked pie shell. Carefully pour cake batter on top. Bake for 45 minutes.
