This week’s column is dedicated to my vegetarian friends.

Asia Noodle Soup

1 package onion soup

4 cups water

2 ounce small mushrooms, washed and sliced

2 cups shredded spinach

1 package Ramen noodles

Combine soup and water in pot and bring to boil. Stir in mushrooms, spinach and noodles. Simmer, covered, 5 minutes or until mushrooms are just soft.

Veggie Burritos

1 red onion, chopped

1 green pepper, chopped

1 small jalapeno pepper, minced

1 stalk celery, chopped

2 cloves garlic, minced

1/2 to 1 cup chunk cheese

1 cup black olives

2 tablespoons olive oil

1 teaspoon ground pepper

2 tablespoons cumin

3 to 4 teaspoons coriander

handful cilantro

salt to taste

1 teaspoon oregano

2 cups pinto beans, cooked or canned

6 flour tortillas

In large skillet, heat olive oil. Add garlic, red onion, green pepper, jalapeno pepper and celery; saute until limp. Add pinto beans, cheese, olives, pepper, cumin, coriander, cilantro, salt and oregano. Heat to melt cheese. In hot cast iron skillet, heat tortillas, one at a time, until they puff. Fill tortillas and bake in casserole dish in 350 for 15 to 20 minutes. Serve with salsa.

Zucchini-Tomato-Onion Casserole

2 cups thinly sliced zucchini

1 tomato, sliced thin

1 medium onion, sliced thin

3 tablespoons grated Parmesan Cheese

salt and pepper to taste

In a greased 9-by-5-by 2-inch baking dish, layer half of zucchini, tomato and onion. Sprinkle with half the cheese. Repeat. Sprinkle salt and pepper on each layer if desired. Bake, uncovered, in 350 degree oven for 40 minutes. Cover and bake 20 minutes more.

“Different” Rhubarb Cake

4 cups, peeled and chopped fine, rhubarb

1 cup sugar

1 package strawberry Jell-O

2 cups yellow or white cake mix

1 cup cold water

5 tablespoons melted butter

In 8-by-8-inch baking dish, place and mix the first four ingredients one at a time. Spread the mix out to the edges of the pan. Then pour over the mixture, the cold water and melted butter. Bake at 350 degrees for 1 hour.
