This week's column is dedicated to all the people who don't take off to Southern climates, for whatever reason.


Noodle Ring

Mix together gently:

3 eggs, lightly beaten

1 teaspoon salt

1/8 teaspoon pepper

3/4 cup milk

1 tablespoon butter, melted

drained hot boiled noodles (10 to 12 ounces uncooked)

Preheat oven to 350 degrees. Place in well buttered 10-inch ring mold. Set in pan of water (1-inch deep). Bake for 45 minutes or until knife plunged into center comes out clean. Unmold; fill center with hot creamed chicken, seafood, etc. Serve immediately.


Stuffed Tomatoes

Scoop out centers of 6 tomatoes. Fill with tomato pulp mixed with soft bread crumbs, grated American cheese, crisp bacon bits, grated onion, salt and pepper. Top with buttered crumbs and additional cheese, if desired. Bake at 350 degrees for 30 minutes.


Oatmeal Bread

Bring to boil in saucepan: 1 1/2 cups water and 1 1/2 teaspoons salt. Remove from heat. Stir in 1 1/2 cups rolled oats and then pour into large bowl.

Stir and cool to lukewarm, then add 1/3 cup brown sugar and 1 tablespoon shortening. Crumble 1 cake of compressed yeast with 1/4 cup lukewarm water. Blend in the yeast mixture with a spoon, then with hands add and mix 3 to 3 1/4 cups sifted flour. Dough will be sticky.

Knead and let rise until double (about 1 1/2 hours). Punch down and place in a greased 9-by-5-by-3-inch loaf pan. Pat into shape. Let rise until double (about 1 hour). Bake at 375 degrees for 40 to 45 minutes until dark brown.


Peanut Butter Cake

Grease and flour two 8-inch layer pans or 9-inch square pans.

Sift together:

1 1/2 cups sifted cake flour or 1 3/8 cups flour, 1 cup sugar, 2 teaspoons baking powder and 1/2 teaspoon salt.

Add: 1/4 cup soft shortening, 1/4 cup peanut butter (not oily), and 2/3 cup milk. Beat 2 minutes with an electric mixer. Add egg. Beat 2 additional minutes. Pour into prepared pans. Bake at 350 degrees for 35 to 40 minutes. Cool.

Frost with: Peanut Butter Broiled Icing

Mix together:

1/2 cup brown sugar

3 tablespoons soft butter

3 tablespoons cream

3 tablespoons peanut butter

Spread on cold cake, place under broiler (low heat) until mixture browns.
