Oat Muffins

1 cup milk

2/3 cup rolled oats

1/2 teaspoon salt

4 teaspoons baking powder

3 tablespoons sugar

1 tablespoon salad oil

1 egg

1 1/3 cups flour

Heat milk until film comes on surface. Remove from heat and add rolled oats. Let stand 5 minutes. Add shortening to rolled oats; sift dry ingredients and add to mixture along with the well beaten egg. Stir batter just long enough to mix in dry particles. Don't beat until smooth. Bake at 375 degrees for about 15 minutes or until golden brown.

 

Scalloped Oysters

1 1/2 teaspoons onion, grated

1/2 teaspoon Worcestershire sauce

1 (4 ounce) can drained mushrooms

24 coarsely crushed soda crackers

1/4 cup milk or half and half

paprika

1/2 cup butter

1 pint oysters

1/2 cup oyster liquid

Heat drained mushrooms, onion, Worcestershire sauce and 6 tablespoons butter in saucepan until butter melts but not brown. Drain oysters and save liquid. Put 1/3 cup crushed crackers in 2 quart casserole. Layer half the oysters, mushrooms, sauce and crumbs. Repeat with remainder of ingredients. Save crumbs for topping. Combine cream/milk and 1/2 cup oyster liquid. Pour over all; dot with remaining 2 tablespoons butter and sprinkle with crumbs and paprika. Bake at 350 degrees for 40 minutes or until crisp and brown.

 

Onion Shortcake

4 tablespoons butter

2 cups sliced mild onions

1 egg slightly beaten

1/2 cup sour cream

1/2 teaspoon salt

1/8 teaspoon pepper

1 recipe of biscuit dough or enough refrigerated biscuits to roll out for a 6-by-11-inch pan.

Spread biscuits in a greased and floured pan.

Melt butter in frying pan and saute onions until golden. Spread over biscuit dough. Mix egg, sour cream and seasonings. Pour over onions. Bake at 375 degrees about 25 minutes until custard is nicely browned.

 

Fruit Cocktail Cake

1 cup white sugar

1 egg

1 medium size can (16 ounce) fruit cocktail, drained

1 1/2 cups flour

1/2 teaspoon salt

1 teaspoon baking soda

1/2 cup brown sugar

1/2 cup nut meats

1 pint whipped cream

Mix sugar, egg, fruit cocktail, flour, salt and baking soda together in bowl. Pour in 8 by 8 inch floured pan. Mix brown sugar and nut meats together and sprinkle over top of mixture. Bake 35 minutes in a 350 degrees oven. Serve warm with whipped cream.
