Italian Love Cake

1 marble or chocolate cake mix

2 pounds ricotta cheese

3 eggs

2 teaspoons vanilla

1 8-ounce container of whipped topping

3/4 cup sugar

1 small box instant chocolate pudding

Follow directions on cake mix box and put into a 13-by-9-inch pan. In a bowl, blend until smooth the ricotta cheese, eggs, vanilla and sugar. Pour this over cake batter. Bake 1 hour at 350 degrees. In smaller bowl make up the chocolate instant pudding. When thick, fold in the 8-ounce container of cool whip. Spread on top of cake after cake is very cold.


Best Ever BBQ Chicken

Preheat grill to medium heat or turn on broiler (in stove). Place a rack 3 inches from the heat.

Combine in small saucepan:

1/4 cup ketchup

3 tablespoons cider vinegar

1 tablespoon Worcestershire sauce

2 teaspoons firmly packed light brown sugar

1 clove of minced garlic

Bring to a boil, after mixing well, over medium high heat. Cook, stirring constantly, until thickened, about 3 minutes. Remove from heat. Stir in 1/4 teaspoon black pepper. Brush some of the ketchup mixture on one side of three skinless chicken thighs and on one side of three skinless chicken legs. Place the chicken, sauce side down, on the grill (or sauce side up under the broiler). Grill or broil, turning and basting with the remaining sauce, until the chicken is cooked through and the juices run clear when pierced with a knife, 6 to 8 minutes per side.


Angel Pie

7 1/2-ounce milk chocolate candy bar with almonds

22 large marshmallows

1/2 cup milk

1/2 pint whipping cream

9-inch graham cracker crust

In double boiler, melt candy bar, milk and marshmallows, then cool. Whip cream until stiff. Pour into cooled chocolate mixture and fold together. Pour into pie shell and let stand in refrigerator at least 2 hours.


Chee-Co Pie

1 unbaked pie shell in pan

Combine 3 eggs with 1/3 cup cream, 1 teaspoon salt and 1/8 teaspoon pepper. Beat until smooth. Add 1 tablespoon grated onion, 2 cups drained whole kernel corn and 1 cup grated sharp cheese. Pour into pastry lined pan.

Place 6 strips of partially cooked bacon over top, spoke fashion. Bake in moderately hot oven (400 degrees) 25 to 30 minutes.



1/2 cup shortening

1 1/2 cups sugar

2 eggs

1 teaspoon vanilla

2 squares chocolate, melted

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1/3 cup milk

Mix shortening, sugar and eggs together. Stir in vanilla and melted chocolate. Add sifted dry ingredients alternately with milk. Chill dough. Form into 1-inch balls and roll in sifted confectioners sugar. Bake on greased baking sheet at 350 degrees for 10 to 12 minutes.


Gail's Rhubarb Bread

Mix together:

1 1/2 cups brown sugar

1 egg

1 cup milk

2 tablespoon vinegar

1 teaspoon vanilla

Then add:

2 1/2 cups flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon salt

2 1/2 cups chopped rhubarb

Pour into 2 greased pans and on top put a mixture of:

1/2 cup sugar

1 tablespoon soft butter

1 teaspoon cinnamon

Bake at 350 degrees for 1 hour.
