Filet Chile Colorado tonight at Blue Sky!

We've made a rich, earthy, chile sauce using anchos, guajillos, pasillas and chile

negros. We're cooking chunks of tender filet to your preferred doneness and

setting them atop of this addictive sauce. Alongside will be a flavorful yellow rice,

seasoned black beans, and some calabacitas( zucchini)...a few soft flour tortillas

with butter and....delicioso!
