Winter cooking classes continue at Nina June with a trip to Venice, the most enchanting city in Italy, maybe in the whole world. The Queen of the Adriatic is famous for seafood but polenta and rice also play surprising roles. Chef Sara plans on two unusual Venetian specialties, bàccala mantecato, creamy salt cod piled on crostini that’s a favorite with a glass of prosecco in dockside bars, and pesce in saor, a deliciously spicy-tart fish that’s as perfect for dinner parties as it is for picnics. But she’ll also introduce you to the merits of Venetian risotto nero, rice made inky black with nero di seppia, as well as the extravagance of polenta enriched with butter and cheese. And lots more.
