The Only Doughnut reopens after its first winter break

Belfast — It’s been a little over a year since The Only Doughnut made its first appearance on the Belfast food scene, and the shop reopened Wednesday after its first winter pause.

In the beginning, it was a booth at the United Farmers Market, putting a 21st-century spin on a traditional confection. Much has happened since November 2018.

Inspired by an early fan base, owner Sally Jaskold and head baker Matt Wheeler, both of Belfast, decided to open a dedicated retail bakery in May 2019 and offer their fresh, from-scratch, hand-cut doughnuts on a more full-time basis. They retooled an existing kitchen to suit their needs, and the result is their shop just outside town, in the building beside Aubuchon Hardware on Northport Avenue.

“Those extra days gave (us) a chance to perfect (our) dough recipes,” Jaskold said. “(We) were amazed to learn what a science the doughnut represents. Relative humidity, the starting moisture content, potato variety — many factors influence the behavior of dough, on the table and in the fryer.”

She and Wheeler love to innovate, reinventing the familiar and introducing the new. “Citrus was one of the early winners, with its tangy accents — not just for summer!” Jaskold said. “Then customers insisted on molasses, an old New England standby.”

They brought a panoply of glazes and finishes: chocolate ganache, sweet cream (their own rich version of a “plain” glaze), salted caramel, traditional cinnamon sugar, and maple, to name a few. They also offer a gluten-free doughnut.

The Only Doughnut bakes to order for weddings, conferences, offices and breakfast tables (218-1231 and on Facebook). They offer discounts on half-dozens and dozens, as well as punch cards for frequent buyers. The shop’s coffee and espresso drinks begin with beans from Unrest Coffee in Hampden.

The retail shop at 225 Northport Ave. is open 6 a.m. to noon Wednesday to Friday and 8 a.m. to noon on weekends.
